What's Cooking This Week?

September 9th - 14th
Monday: Slow Cooker Chili, Biscuits and Bread, and a Salad
Tuesday: Parmesan Orzo with Chicken and Peas
Wednesday: Grilled Chicken Sandwiches, Baked Garlic Fries, and Roasted Cauliflower

Thursday: Creamy Baked Chicken and Black Bean Taquitos and a Spinach Salad
Friday: ?
Saturday: Mommy's Night Off 

I'm definitely a planner - I have lists everywhere at work and at home.  I absolutely have to menu plan each week and I enjoy planning meals...even if I don't exactly stick to my plan for the entire week.  I make sure to keep some "flexible and easy" meals in the mix, so if a day is just too busy - I can switch the meals around.  
My weekly goals:
One meal with red meat, one meatless meal, and boneless, skinless chicken breast, or seafood for the remainder of the meals.  I try to keep most meals light and with a good amount of veggies!
I aim to prepare the majority of each meal from scratch which means that there's not much to eat other than what I buy and plan for the week - and I enjoy that challenge.  We have a yummy, homemade meal (almost) every night and then we have delish dinner leftovers for lunch!  My family is always well-fed, and that makes my heart so happy.
