I just can't say it enough ... I <i><b>adore</b></i> <a href="http://www.cookinglight.com/food/recipe-finder/september-2013-recipe-index-00412000084692/"><i>Cooking Light</i> magazine</a>. As I was looking through the latest issue, I found this absolutely brilliant "easy lasagna" idea! Lasagna is one of my favorite things to eat but I'm always so annoyed by the preparation... the noodles stick or tear, the layering can be a pain, and it's such a time-comsuming dish. Instead of using noodles, ricotta, meat, etc., why not just use prepared ravioli? Genius! The ravioli provide the noodles, cheese, and other yummy, flavorful fillings for the dish. I love <i><a href="http://www.buitoni.com/product-category/ravioli.aspx#/ravioli">Buitoni</a> </i>ravioli (found in the refrigerated case in the store) ... we used the Mushroom Agnolotti (a bit larger than a ravioli and in a half-moon shape) <i>yummmm</i>. I added fresh spinach and extra cheese between the layers of ravioli and (because I had a little bit of extra time) I made my own <a href="http://littlemommybigappetite.blogspot.com/2011/08/pasta-sauce-success.html">slow cooked pasta sauce with ground beef</a>, but feel free to use a jarred sauce to speed up the process! Preheat the oven to 375 degrees.</div>

1. Cook the ravioli according to package directions. Set aside.</div>

2. Spray a glass baking dish with nonstick spray and add a layer of sauce to the bottom of the dish.</div>

3. Add one layer of the ravioli on top of the sauce. Sprinkle the shredded cheese and spinach on top of the ravioli.</div>

4. Add another layer of sauce and ravioli. Top with cheese and spinach.</div>

When it comes to seafood, crab and shrimp are on the top of my list. We've prepared shrimp in so many different ways at home, but had never grilled them, shell on. My mister wasn't sold on the whole idea ... which is surprising because I'm pretty sure he'd grill almost anything, but I'm so glad that I convinced him otherwise. We definitely agree that this is one of the best ways to prepare shrimp at home; they were moist, tender, and full of flavor ... especially that amazing grilled taste - yum! The key is to buy large, wild caught shrimp with the shell and tail on; although this makes for a bit more prep work, they are<i> so </i>worth the time! Enjoy!<br />

Heat the grill to a low-medium temperature.</div>

1. Take the thawed shrimp, rinse them and use a pairing knife (preferably a curved pairing knife) to devein the shrimp (while leaving the shell on) and create a deep enough cut to hold some of the butter/garlic mixture.</div>

2. In a small bowl, combine the melted butter, garlic, parmesan, and seasonings. </div>
<div style="text-align: center;">
3. Place the shrimp in a shallow dish and coat with the butter mixture while using your hands to ensure some of the mixture gets into the cut on the top of the shrimp made by the pairing knife. </div>

4. Insert the shrimp onto skewers.</div>

5. Grill the shrimp on low to medium heat for 2-4 minutes total. Watch them carefully so that you do not leave them on the heat for too long - two minutes per side is usually perfect. </div>

I love <i>Cooking Light </i>magazine! The pages of each issue are packed with proof that "lighter" does not mean less flavor or a less filling meal. We are definitely Tex-Mex fans, so when I came across this recipe, I knew I had to try it ... especially with the spicy avocado dressing. 1. Pound the chicken breasts to a uniform thickness and coat with the taco seasoning.</div>

This has been such a great summer though (and it's not even over yet)! I've enjoyed each and every second I've spent with loved ones. My mister and I had the opportunity to take a trip to Bermuda without our little one - this trip was definitely one to remember. Conquering my fear of flying was <i>so</i> worth it!<br />

Bermuda is not part of the Caribbean, it's actually considered a "North Atlantic" island. It is about 600 miles from the coast of Cape Hatteras, North Carolina. However, with water like this it's really easy to see why it's mistaken for a Caribbean island....</div>

Bermuda's beautiful "pink sand" comes from microscopic red organisms that live among the coral. Those red organisms blend with white particles to create the gorgeous pink hue. </div>

We stayed at Bermuda's <a href="http://www.cocoreefbermuda.com/">Coco Reef Resort</a> in Paget Parish. This resort was amazing - it is located right on Elbow Beach with it's own private stretch of beach. The food was perfect, the staff was friendly and helpful, the location was priceless.</div>

The water at Elbow beach is dotted with volcanic rock built up from vents in the ocean. We had a great time snorkeling around them and climbing up on to the tops at low tide. </div>

There were so many things that we didn't even get to explore on this trip, so I think a third trip is in the works. We'd love to visit the <a href="http://www.thewestend.bm/">Royal Naval Dockyard</a> and the <a href="http://www.caves.bm/">Crystal Caves</a> in the future, but it was so difficult to drag ourselves away from the gorgeous beach on this trip. </div>

Bermuda is known for some yummy cocktails. The first one that we had, a Rum Swizzle, was at the <a href="http://www.swizzleinn.com/">Swizzle Inn</a>. This drink was a combination of Bermuda rum, and fruit juices (orange and pineapple). The drink was <i>okay</i> and so was the food. Oh well, you never know until you try, right?</div>

The second drink we tried was my absolute favorite .. the Dark and Stormy (although there was nothing dark or stormy about our vacay <i>thankfully</i>). The Dark and Stormy is made with Gosling's Rum and ginger beer - love. </div>

The food in Bermuda was, for the most part, wonderful. Bermuda is really a foodie's paradise because the culinary style of the island is a mix of cultures, amazing flavors, and quality ingredients. Be aware ... <i>everything</i> is pricey due to the fact that nearly all of the items have to be imported. </div>

My favorite meal of the trip was a dinner at the resort. I honestly would have been thrilled to eat there every night, but I didn't want to regret choosing not to venture out to other landmark restaurants/pubs.</div>

Aside from visiting the Swizzle Inn, we also went to <a href="http://www.hogpennypub.com/index2.html">The Hog Penny</a> (a pub visited by Rachel Ray on "<i>40 Dollars a Day</i>"). This pub is said to be the true inspiration for the <i>Cheers</i> bar. The food was great, but the service was slow (it was <a href="http://www.thisweek.bm/Current-Events/2013-harbour-nights.html">Harbour Night</a> though so it was extremely crowded in Hamilton). I had a salad, not something that was really picture-worthy ... but I did indulge in a little local bar food.</div>

My little lady doesn't care much for fish. So, I did what most moms do ... I disguised them as crunchy little sticks for dipping. She loved them and so did we! These are definitely not your typical freezer-section fish stick. This recipe is so simple and delish ... enjoy!<br />

1. In a large sauce pan, saute mushrooms and onions in olive oil.</div>

2. Once the mushrooms and onions are tender, add the garlic and saute for a minute longer.</div>

3. Add the dry orzo and toss in the pan for 1-2 minutes.</div>

4. Add one cup of chicken stock, stir and allow the liquid to absorb. </div>

5. Add the next cup of stock and repeat until all of the stock has been added.</div>

6. Finally, add the peas and white wine. Stir to combine and heat.</div>

I saw this recipe in <i>Cooking Light</i> and had to try it. Not only did the recipe have a "mini" ingredient, but it also included one of my favorites - pork tenderloin. The marinade is amazing and the pork ends up perfectly tender ... love. This recipe is great for firing up the grill on a warm summer night. <br />

1. Combine the first seven ingredients in a Ziploc bag. Add the pork and close the bag. Refrigerate in the marinade for at least 30 minutes. </div>

2. Preheat the grill to medium-high. Insert the pork onto skewers, leaving space between each cube of meat. Insert the peppers onto separate skewers.</div>

So, I have a new found love for ground turkey. After making the <a href="http://littlemommybigappetite.blogspot.com/2013/05/jalapeno-swiss-turkey-burgers.html">yummy turkey burgers</a>, I saw this meatball recipe in <i>Cooking Light </i>and knew I'd adore the dish. I love that the sauce is homemade, but it is still such a simple dish to prepare for a quick, healthy meal (no preservatives or scary ingredients!). I'm still convinced that the best way to prepare almost any vegetable is to roast it in the oven. Roasting a vegetable brings out amazing flavors and allows the veggies to keep most of their vitamins and nutrients as opposed to other cooking methods. These asparagus "fries" are perfectly crisp, tasty, and pair well with a grilled chicken or a burger. My little one enjoyed dipping these "fries" too!<br />

I'm <i>super </i>happy anytime I can make a good meatless meal, and this one is definitely near the top of my list. I love zucchini and alfredo, so combining the two make for a perfect meal in my house. The texture of the zucchini adds a slightly crisp bite to each mouthful ... love.<br />

1/2 box of prepared whole grain linguine noodles<br />
3 zucchini, peeled<br />
2 garlic cloves, minced<br />
1 sweet onion, diced<br />
1 tsp. olive oil<br />
1 Tbsp. unsalted butter<br />
1 Tbsp. flour<br />
1 c. chicken stock<br />
1 c. skim milk<br />
1 1/2 c. shredded parmesan<br />
1 tsp. oregano<br />
1 tsp. parsley<br />
1 tsp. pepper<br />
1/2 tsp. salt<br />
crushed red pepper flakes<br />
<br />
1. Using a vegetable peeler, or a mandolin, slice the zucchini into thin ribbons.<br />
2. Steam the ribbons for 2-5 minutes in a steamer basket. Remove and set aside.<br />
3. In a large pan, saute the garlic and onion in olive oil.<br />
4. Add the butter and flour to crate a paste-like consistency.<br />
5. Slowly add the stock, milk, and parmesan. Stir to combine. <br />
6. Add the remaining ingredients and simmer for 10 minutes. <br />
7. Before serving, add the zucchini ribbons and noodles and toss with the sauce.<br />

1 c. sweetened coconut flakes, finely chopped (optional to chop)</div>

Preheat the oven to 400 degrees and line a baking sheet with parchment paper.</div>

1. Sprinkle the chicken tenders with all-purpose seasoning.</div>

2. In a shallow bowl, mix together the egg and oil.</div>
<div style="text-align: center;">
3. In another shallow bowl, combine the salt, onion powder, curry powder, cayenne, coconut, and panko. </div>

4. Dip the tenders into the egg mixture and then into the coconut mixture. </div>

5. Place the tenders on the baking sheet. Bake for 15 minutes, or until cooked through. </div>

black pepper or all-purpose seasoning, to taste</div>

1/3 c. low sodium soy sauce</div>

1/4 c. honey</div>
<div style="text-align: center;">
1/4 c. tomato paste</div>
<div style="text-align: center;">
3 Tbsp. rice vinegar</div>
<div style="text-align: center;">
2 garlic cloves, crushed or minced</div>
<div style="text-align: center;">
1 Tbsp. water</div>
<div style="text-align: center;">
1 tsp. sesame oil</div>
<div style="text-align: center;">
1 tsp. onion powder</div>

1 tsp. sriracha</div>

1 heaping Tbsp. of cornstarch</div>

1/4 c. water</div>

1. Sprinkle the chicken with pepper, or all-purpose seasoning, and place it into the slow cooker.</div>

2. In a small bowl, combine the soy sauce, honey, tomato paste, vinegar, garlic cloves, water (1 Tbsp.), oil, onion powder, and sriracha. Stir to combine.</div>
<div style="text-align: center;">
3. Pour the mixture over the chicken. Cover and cook on LOW for 3-4 hours.</div>
<div style="text-align: center;">
4. Remove the chicken (leaving the sauce in the slow cooker) and shred the chicken.</div>
<div style="text-align: center;">
5. In a small dish, combine the cornstarch with the 1/4 c. water and pour it into the sauce in the slow cooker. Cover and cook on high until the sauce thickens.</div>

6. Return the shredded chicken to the slow cooker to warm and mix with the sauce.</div>

This dish holds a special place in my heart. Over the years, it's become increasingly important to me to learn to prepare all of the <a href="http://littlemommybigappetite.blogspot.com/2012/12/perfect-little-pierogies.html">traditional Polish dishes</a> that I enjoyed growing up. Food has the ability to evoke such strong memories and my hope is to create some of the same wonderful memories with my family. <br />
Traditionally, this dish is called golabki (Polish cabbage rolls), meaning "little pigeons". Don't get scared - no pigeons were involved in the preparation of this dish :)<br />
My little one absolutely loved these, she said they were like meatballs. My family usually prepares this dish in the oven, but I decided to go with the slow cooker since I'm out of the house all day. It worked beautifully. Cheers to passing on traditions xo<br />

Makes about 15 rolls </div>

1 large sweet onion, chopped</div>
<div style="text-align: center;">
3 garlic cloves, crushed</div>
<div style="text-align: center;">
1/2 c. instant rice, uncooked</div>
<div style="text-align: center;">
1 1/2 lbs. ground beef, uncooked</div>
<div style="text-align: center;">
1 tsp. salt</div>
<div style="text-align: center;">
1/2 tsp. pepper</div>
<div style="text-align: center;">
1/2 tsp. paprika</div>
<div style="text-align: center;">
1 Tbsp. parsley</div>
<div style="text-align: center;">
1 egg</div>
<div style="text-align: center;">
1 c. tomato soup, or chopped stewed tomatoes</div>

2 cans tomato sauce</div>
<div style="text-align: center;">
2 cans tomato soup</div>

1 large head of green cabbage</div>
<div style="text-align: center;">

Prep: Remove the stem of the head of cabbage and then place it in a pot of water to begin simmering.</div>
<div style="text-align: center;">
Simmer the cabbage while preparing the other ingredients. Allow the leaves to become tender enough to roll without breaking. </div>

1. In a large pan, saute the onion and garlic until tender. Set aside to cool.</div>
<div style="text-align: center;">
2. In a large bowl, add the onion and garlic with the uncooked beef and rice. </div>
<div style="text-align: center;">
3. Add the spices, egg, and tomato soup. Mix well. </div>
<div style="text-align: center;">
4. Prepare the cabbage leaves by cutting off any of the thick vein pieces and laying them flat. </div>
<div style="text-align: center;">
5. Scoop 1/4 to a 1/3 cup of the meat mixture onto a cabbage leaf. Roll the leaf and tuck the ends into the roll. Set aside and repeat until all rolls are prepared. </div>

6. Pour tomato soup into the bottom of a slow cooker (just to coat the bottom). Then, layer the cabbage rolls tightly in the bottom of the slow cooker. Top with remaining tomato soup and sauce. </div>

7. Cook on low for 8 hours. </div>

1 can of sliced water chestnuts</div>

1 c. minced mushrooms</div>

1/8 c. seafood stock</div>

1. Heat 1 Tbsp. of oil in a wok. Once the oil is heated, add the cabbage, carrots, water chestnuts, and mushrooms. Saute until tender.</div>

2. In a small bowl, mix together soy sauce, stock, duck sauce, Tiger Sauce, oyster sauce, sriracha, and sesame oil. Pour this mixture into the wok. </div>

3. Sprinkle the shrimp with all-purpose seasoning. Add the garlic, shrimp, and scallions. Stir fry 1-2 minutes, or until the shrimp are cooked through. Transfer the mixture to a glass bowl.</div>

4. Wrap two spoonfuls of the mixture inside of each egg roll wrapper.</div>

When I went away to college, they had a little cafe in the gym that had a wrap on the menu made with bananas and peanut butter. It was pretty good, but <i>too</i> sweet for my liking (crazy, right?). I noticed that they had fresh strawberries, so I asked the girl if she could make the wrap with the strawberries instead of the bananas. My favorite breakfast treat was born, and nearly 10 years later I am still making it. It is the perfect breakfast because it has a good mix of everything to start your day: good fats (from nuts and peanut butter), carbs, and protein. Can't beat it!<br />

Preheat the oven to 350 degrees and grease an 8 by 8 baking pan.</div>

1. Lightly brown the butter in a saute pan.</div>

2. Allow the butter to cool and mix it with the sugar.</div>

4. Slowly add the remaining ingredients. Thoroughly combine.</div>

5. Pour the batter into the baking pan. </div>

3 boneless, skinless chicken breasts, thawed</div>

12 oz. bottle of buffalo wing sauce</div>

1 packet of dry ranch seasoning mix (or this <a href="http://www.slenderkitchen.com/homemade-ranch-seasoning-mix/">homemade mix</a> - love)</div>

1 Tbsp. butter</div>

sliced scallions</div>

1. Place the chicken breasts in the slow cooker.</div>

2. Cover the chicken with the buffalo wing sauce and ranch mix.</div>

3. Cook the chicken on low for 5-6 hours.</div>

4. Shred the chicken in the slow cooker and add the butter.</div>

5. Stir and allow the chicken to heat for about 30 minutes more. </div>

6. Place shredded chicken in room temperature phyllo cups. </div>
