As I'm writing this, I may or may not have a grey cloud over my head and an imaginary tear rolling down my face. My last "summer-y" recipe of the year. Wah! I dislike loathe going back to school time. Why? Oh, I'm the teacher. So, not only am I headed back into the whole "work responsibilities" routine, but most importantly, (similar to some of you SAH Mommies) I'll miss the precious time with my little one. Sadly, not because she's going to school... because I am. I know, at least I have the summers, right?
Okay, enough whining...promise. Now that you are thanking your lucky stars I'm not teaching your kids, let me distract you with a super yummy recipe! ;)
My aunt sends me text messages with pictures she takes of recipes she thinks I might like ... yup, she's too cute for words. This barbecue sauce recipe was one that I couldn't wait to try. Mangoes and jalapenos ... love! It was perfect, and perfectly homemade (had a little texture to it). I adore it. It makes the house smell amazing too.

Mango Jalapeno Barbecue Sauce
Recipe courtesy of: My Aunt Pam via USA Weekend Magazine www.weekend.com (Found in the Times Leader newspaper in NEPA)
2 Tbsp. olive oil
1 small, sweet onion, diced
1 red bell pepper, diced
3 garlic cloves, minced
1 tsp. salt
1/2 tsp. allspice
1/3 c. red wine vinegar
3 Tbsp. molasses
2 Tbsp. Worcestershire
2 Tbsp. lime juice
1/4 c. tomato sauce
1 1/2 c. diced mango (I used frozen chunks and thawed them)
2 jalapeno peppers, seeded and diced (reserve a few seeds to throw in for some spice!)
1. Heat the olive oil in a large skillet and then add the onion and red pepper. Cook until the onion is translucent.
2. Add the garlic, salt, and allspice, and cook for 2 minutes more.
3. Stir in vinegar, molasses, Worcestershire, lime juice, and tomato sauce and cook for 1 minute more.
4. Transfer the mixture to a blender and add the mangoes and jalapenos (this is where I throw in a few seeds).
5. Blend until smooth!
I marinated thin chicken breasts in the BBQ sauce, grilled the chicken while basting with the sauce, and then used reserved sauce for dipping. We couldn't get enough!
Shown with a side of Cheesy Zucchini "Noodles"...yumm!
