On vacation, I tried these bites and adored them. I'm always looking for another way to use quinoa and this is the best quinoa recipe I've found so far! They're a perfect little app, or light meal, and a great addition to a party spread. Blue cheese dressing for dipping is a must.

Buffalo Chicken Quinoa Bites
Makes 24 bites
1 c. cooked quinoa
1 egg
1/4 c. finely chopped onion
1 c. cooked, shredded/chopped chicken
1/4 c. buffalo sauce
1/2 c. shredded mozzarella cheese
1/2 c. panko bread crumbs
1 tsp. grated garlic
Preheat the oven to 350 degrees.
1. Mix all of the ingredients together.
2. Spray a mini muffin tin with nonstick spray.
3. Scoop the mixture into the muffin tin (fill to the top) and press down to compact the mixture.
4. Bake for 25 minutes.
5. Serve with blue cheese dressing.

I have not tried quinoa but these do look fun if not tasty. And I have had one of those chopping tools for several years and have given them as gifts. Never used it with chicken though, mostly hamburger.

I haven't tried quinoa before, I've always been too scared. But I keep finding all of these great recipes that make me want to try it and here's another one! These bites look wonderful :)

Shred your chicken in a kitchen aid with they paddle attachment. Easiest, best thing ever! Pulled pork, shredded turkey on mashed potatoes, love it!
