Green Chimichurri Sauce


It's amazing how such a small amount of something so delicious can have a big enough flavor to change an entire dish.  I recently made this green chimichurri sauce (to recreate Gordon Biersch's Churrasco Steak Tacos) with grilled flat iron steak - so yum.  I can't wait to try it next time as a marinade!  You'll love this one - it will kick other condiments right out the window!

Green Chimichurri Sauce
Recipe by:  Simply Recipes
1 c. flat leaf parsley, trimmed of thick stems
3-4 garlic cloves
2 Tbsp. fresh oregano
1/2 c. olive oil
2 Tbsp. red wine vinegar
1 tsp. sea salt
1/4 tsp. black pepper
1/4 tsp. red pepper flakes

1.  Finely chop parsley, garlic, and oregano.
2.  Mix in the remaining ingredients and serve at room temperature.
