I saw this recipe in the latest issue of Food Network magazine and knew I had to try it. I adore a good caesar salad - and it's light? Sold. It's incredibly light (calorie-wise), but full of flavor. This recipe, however, isn't for everyone. You have to be okay with yogurt (which I am) and with a spicy dressing (lots of pepper and garlic in this one). I'm loving this homemade, light alternative and can't wait to try a few more. What's your favorite?

Light Caesar Salad Dressing
Recipe adapted from: Food Network Magazine - December 2012
Serves 4-6
1/2 c. non-fat plain Greek yogurt
1/2 c. shredded parmesan cheese (plus extra for topping the salad)
1 large garlic clove, crushed/mashed
1 tsp. anchovy paste
1 tsp. lemon juice
1 tsp. dijon mustard
1 Tbsp. water
1/4 tsp. pepper
pinch of salt
1. In a small bowl, mix all ingredients well and refrigerate. If you don't mind a thicker, textured dressing then serve as is. I prefer this option. :)
If you enjoy a smooth dressing, place the ingredients in a blender or small food processor.
