Eggless Chocolate Cupcakes (with a dairy-free option)

It's been far too long since my last post.  I kept thinking that this summer would leave me with more time to share great things with you all, but the truth is - I've been busier than when I'm working!  In the midst of thoroughly enjoying this summer, I have found some great recipes.
I made these cupcakes for my daughter's party.  I was drawn to the ingredients list because it is so different from the usual from-scratch cupcakes.  No eggs, an option for no milk, no butter... what?  But they were great!  They have a rich, dark chocolate taste ... I adored every bite!

Eggless Chocolate Cupcakes

Makes 12 cupcakes

1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
1 tsp. salt
1/3 c. cocoa powder
1/2 c. vegetable oil
1 1/2 c. milk (option to substitute water or soy milk)
1 tsp. vinegar
1/2 c. chocolate chips (optional)

Preheat oven to 350 degrees.
1.  Blend all ingredients together with a mixer.
2.  Pour the mixture into tin with cupcake liners.
3.  Bake for 20 minutes, and allow cupcakes to cool before icing.

I can hardly believe they contain no eggs :)
BTW - to make it dairy-free, I substitute to soy-milk
