Skinny Holiday Dessert: Apple Cinnamon Pecan Angel Food Cake

I love a "skinny" dessert and this is a great one!  This recipe appeared in the most recent Healthy Cooking issue... perfect timing!  My skinny-mini momma's birthday was the other day and I needed a yummy light dessert to celebrate her birthday (I swear she should be in an ad for Weight Watchers - she looks amazing!)  We all loved it.  It's the perfect light addition for a holiday get-together!

Apple Cinnamon Pecan Angel Food Cake

1 box of angel food cake mix
1 c. water
2/3 c. applesauce
1/3 c. chopped pecans
1 tsp. apple pie spice

Topping:
By:  Little Mommy

4 sliced apples
2 tsp. apple pie spice 
1 Tbsp. brown sugar
2 Tbsp. unsweetened apple juice
chopped pecans

Whipped cream

Preheat the oven to 350 degrees.
1.  In a large mixing bowl, mix together the cake mix and water.  Mix on low for 30 seconds, then medium for a minute. 
2.  Fold in the apple pie spice, pecans, and apple sauce.
3.  Pour the mixture into 2 loaf pans, or a pan for angel food cake.
4.  Bake for 30 minutes, or until the cakes are golden on the top and dry (do not undercook).  

 In a sauce pan, combine the topping ingredients (except for the whipped cream) and simmer until the apple are tender.

Top cake slices with apple mixture and whipped cream.
