Italian Chicken with Wheat Couscous

One of the perks about going back to work a week before the kids:  actually getting to enjoy an hour-long adult lunch out of the school building.  When the school year starts, teachers become masters at shoving their lunches down in 15 minutes flat while keeping kids from throwing food, wandering the cafeteria, and flicking boogers on each other.  Yup, it's that glamourous.
I've thoroughly enjoyed my week of freedom.  I may have gained five pounds or so, but hey - this comes but once a year, right?  So, I came home tonight craving something really, really healthy.  I found some ingredients and put this dish together ... wondering if it would be a hit or miss.  We ate every bit. My mister requested that I double the amount next time!  This is an easy, healthy, and totally delish dish.  I'm in love.

Italian Chicken with Wheat Couscous
-Little Mommy

Serves 4

1 lb. boneless, skinless chicken breast tenders (or breasts cut into chunks)
1 tsp. all-purpose seasoning
1 tbsp. olive oil
1 c. Italian dressing (I use Newman's All Natural Lite Italian)
1 box of flavored whole grain, or wheat couscous 
(Near East Whole Grain Blends Wheat Couscous - Roasted Garlic and Olive Oil)
1 c. frozen peas, thawed 
salt, pepper to taste

grated parmesan
diced tomatoes
freshly minced parsley

1.  Sprinkle all-purpose seasoning over the chicken tender pieces.
2.  Heat a pan over medium heat and add the olive oil.
3.  Place the chicken in the pan and allow it to slightly brown on each side.
4.  Add the Italian dressing and cook the chicken through.  
5.  Set the chicken aside to cool.  After cooled, shred it into bite-sized pieces.
6.  In a small sauce pan, prepare the couscous according to the box directions.  Add the peas when you add the couscous to the boiling water.
7.  Transfer the couscous and peas to a serving dish and mix with the shredded chicken.
8.  Top with parmesan cheese, tomatoes, and parsley.
