Improv Cooking Challenge: Roasted Red Pepper and Sundried Tomato Sandwich Spread

Guess what time it is?  Improv Challenge time again!  This month's ingredients:  peppers and tomatoes (any kind or form).  Which led to, O.M. Goodness... my new favorite lunch!  I could seriously eat this sandwich every day.  I'm not a mayo person, but I agree that a sandwich needs a lil' something on it.  This sandwich spread is so yummy... savory, tangy, flavorful - way better than mayo!

Roasted Red Pepper and Sundried Tomato Sandwich Spread
-Little Mommy

Yields 1 c. of spread - Refrigerate up to one week

1 large roasted red pepper
4 small sundried tomatoes
2 Tbsp. regular hummus (I use Sabra Classic)
1 heaping Tbsp. non fat yogurt
Optional: a few dashes of hot sauce

1.  Chop the red pepper and tomatoes.
2.  Combine all ingredients in a blend and puree/liquify until the mixture becomes smooth.

The pictured sandwich has: whole wheat artisan bread (toasted), sliced rotisserie chicken, nitrate/nitrite free bacon (1 slice), provolone, sandwich spread, and spinach (I should have added onions!).

  2. That sounds really good and easy! I've been looking for something to replace ajvar -- a roasted pepper and eggplant spread I used to be able to buy locally -- and your recipe looks it could work.
