Cheesy Zucchini "Noodles"

We love zucchini.  Love.  So, while looking at the stockpile of zucchini in the fridge, I came up with a yummy idea.  I've peeled zucchini "ribbons" to mix with fettucini in an alfredo dish before (delish!), but what if zucchini were the only "noodles"?  ....and this tasty side dish was born.  Now, my mister doesn't want to eat zucchini any other way and we all want the last bite - enough said.
Low carb readers - this has the potential to be your best friend.  Such a simple idea ... and the zucchini ribbons turn out well-seasoned, tender, and cheesy.
These will definitely have their frequent spot on the dinner rotation - super healthy, but feels like an indulgence... my favorite way to eat.

Cheesy Zucchini "Noodles"

Serves 4-6

4 medium zucchini, skin peeled off and discarded
olive oil spray
1-2 tsp. of all-purpose seasoning mix
2 cloves of garlic pressed, or finely minced
1/2 c. of your favorite cheese (we use cheddar and parmesan)

Preheat the oven to 425 degrees.
1.  Use a vegetable peeler to peel the zucchini into long, thin ribbons. 
2.  Line a baking sheet with foil or parchment and spray it with olive oil spray.
3.  Spread the ribbons out on the baking sheet.
4.  Spray with olive oil spray again (I used organic olive oil cooking spray) and sprinkle the all-purpose seasoning and garlic over the ribbons.  
5.  Sprinkle the cheese on top of the ribbons.
6.  Bake for 10 minutes, then broil on low for two minutes.
It will probably look like this, but don't get scared ... if you sprayed the bottom with olive oil, then a spatula will get these yummy "noodles" right off of the baking sheet!
