I'm super happy anytime I can make a good meatless meal, and this one is definitely near the top of my list. I love zucchini and alfredo, so combining the two make for a perfect meal in my house. The texture of the zucchini adds a slightly crisp bite to each mouthful ... love.

Serves 4
1/2 box of prepared whole grain linguine noodles
3 zucchini, peeled
2 garlic cloves, minced
1 sweet onion, diced
1 tsp. olive oil
1 Tbsp. unsalted butter
1 Tbsp. flour
1 c. chicken stock
1 c. skim milk
1 1/2 c. shredded parmesan
1 tsp. oregano
1 tsp. parsley
1 tsp. pepper
1/2 tsp. salt
crushed red pepper flakes
1. Using a vegetable peeler, or a mandolin, slice the zucchini into thin ribbons.
2. Steam the ribbons for 2-5 minutes in a steamer basket. Remove and set aside.
3. In a large pan, saute the garlic and onion in olive oil.
4. Add the butter and flour to crate a paste-like consistency.
5. Slowly add the stock, milk, and parmesan. Stir to combine.
6. Add the remaining ingredients and simmer for 10 minutes.
7. Before serving, add the zucchini ribbons and noodles and toss with the sauce.
